Hirschhorn salt, also known as ammonium or ABC shoot, is a strong driving agent. It was formerly made from deer antlers or horn or leather waste, which explains the origin of the name. Hirschhorn salt is a baking vehicle. It is used for the loosening of flat baked goods such as, for example, shortbread, speculatius or gingerbread. It is not suitable for high baking (eg cakes) and differs from baking soda, inter alia due to the absence of acidic ingredients. Hirschhorn’s salt has a slightly stinging ammonia odor, which flies away when baking. It tastes of salmiac, but you should not take the deer’s horn in the raw state, since that is harmful to health.
